Stir-fry spicy pork with mangos and rice - easy, sweet, spicy, loaded with fruit and veggies, protein, and healthy carbs.

Ingredients
1tbspcanola oil
1 ½lbspork loinsliced thinly (*see note)
1large onionsliced thinly
1tbspchili powder
1tsporegano
½tspgarlic powder
½tspsalt
¼tspcumin
1cupsalsa
½cuppeach or mango jam
2large red pepperscored and cut into large chunks
2mangoes or 4 peachescut into large chunks
Fresh cilantrofor serving
Ricefor serving
Instructions
In a large pot or wok (wok is preferable!), heat the oil over medium. Stir fry the pork until JUST done (don’t overcook or it will become tough).
Remove the pork to a clean bowl.
If there’s any liquid from the pork, dump it out.
Saute the onions until soft and just starting to turn golden.
While the onions are cooking, measure the spices and salt into a small bowl.
Once the onions are ready add the spice mix to the wok/pot. Cook for one minute.
Add the salsa and jam and heat thoroughly.
Add the cooked pork, red peppers, and fruit. Remove from heat.
Serve over cooked rice and top with fresh cilantro.
Notes
It's really hard to slice fresh pork super thinly. To help you out, freeze the pork! Even if it's just for an hour or so, it will help. Then slice it as thin as you possibly can, trying to keep your slices an even thickness so they cook at the same rate. When the pork is paper thin you can quickly fry it without over cooking it!
