Halloumi Wraps with Romesco Sauce

These halloumi wraps are filled with salty cheese, crunchy veggies, nuts, and a show stopping sauce! One bite and you'll be hooked!

Ingredients
Romesco Sauce
1
cup
marinara sauce
¼
cup
almond butter
¼
cup
sun dried tomatoes
¼
cup
fresh parsley
a handful... optional but adds a burst of freshness

small roasted red peppers
from a jar

tbsp
olive oil
1
tbsp
vinegar
¾
tsp
salt
½
tsp
paprika
4
cloves
roasted garlic
For the Wraps
8
large tortilla wraps
4 cups
fresh spinach
8
small
radishes
1
cup
sliced almonds or shelled pistachios

halloumi
olive oil
for frying
Instructions
To make the sauce add all ingredients to a blender. Start on low then slowly move up to high speed. Blend until smooth.
Slice the halloumi into 1/4 inch thick slices. Pat each slice with paper towel to remove excess moisture.
Heat a large frying pan over medium heat. Brush a light coating of oil onto each piece of halloumi.
Fry the slices of halloumi until golden brown ( ~30 seconds to 1 minute on each side).
Layer the following in the wraps: ~1/4 cup romesco sauce, 1/2 cup spinach leaves, 1 radish, sliced, 2 tbsp almonds, and 3 slices of cheese.
Wrap it up and eat it!
