morning glory oats

A sweet and spicy hearty oatmeal made with carrots, raisins, and pineapple.
Ingredients

cups
regular or quick cooking oats

cups
water
1
370 ml or 12.5 oz can evaporated milk
1
398 ml or 14 oz can pineapple chunks in pineapple juice
⅓
cup
brown sugar
2
large carrots
shredded
1
apple
shredded
1
tbsp
cinnamon
1
tsp
vanilla powder
or 2 tsp vanilla extract
½
tsp
salt
1
cup
walnut
or other nuts, chopped
⅔
cup
shredded unsweetened coconut
⅔
cup
raisins
Instructions
In a large pot add the oats, water, milk, pineapple chunks (including the juice), and brown sugar.
Heat over medium, stirring frequently, until the oats are swollen and cooked.
Stir in the carrots, apple, cinnamon, vanilla, salt, walnuts, coconut, and raisins.
Notes
This recipe makes a big pot of oatmeal!
