Prep 4 of these Mexicana inspired salads and you'll have lunch ready for the week!

Ingredients

head romaine lettuce
torn
1 1/3
cups
cooked and diced chicken
1
can black beans
drained and rinsed
1
cup
frozen corn
defrosted
4
small tomatoes
diced
Dressing
1/4
cup
canola oil
1/4
cup
lemon juice
2
tbsp
vinegar
1
tsp
buffalo sauce
Franks
1/2
tsp
cumin
1/2
tsp
chili powder
1/2
tsp
oregano
1/2
tsp
salt
Instructions
Whisk together the dressing ingredients.
Layer the following in each of 4 (1 litre) mason jars
1/3 cup chicken
2 tbsp +1 tsp dressing
1/3 cup black beans
1/4 cup corn
1 small tomato, diced
Fill with torn romaine leaves.
