Glory Bowls with Peanut Dressing

Ingredients
Peanut Glory Bowl Dressing

canola oil

water

+ 2 tsp sesame oil

+ 2 tsp nutritional yeast flakes

+ 2 tsp soy sauce

tbsp
+ 2 tsp apple cider vinegar

tbsp
+ 2 tsp peanut butter

garlic
For Each bowl:

cup
thinly sliced red cabbage
½
cup
fresh spinach

cup
cooked barley
or quinoa, couscous, or other grain
⅓
cup
edamame beans
⅓
cup
mango chunks

cup
julienned carrots
¼
cup
roasted and salted peanuts

cup
dressing

chopped fresh basil

Instructions
To make the dressing, add all the ingredients to a blender. Start on low and then slowly dial it up to high speed. Blend until smooth.
To make the bowls, add each ingredient to a bowl and top with 1/4 cup of the dressing.
