Ingredients
8cupschopped broccoli
½cupchopped red onion
2cupsblueberries
2cupschopped strawberries
1cupsunflower seeds
1cupdried cranberries
1 ½cupcrumbled feta
Dressing:
1cupplain yogurt
½cupalmond butter
¼cupcanola or olive oil
2tbsplemon juice
1tbspbrown sugar
1tspsalt
1clovegarlic
Instructions
Place the broccoli, red onion, blueberries, strawberries, sunflower seeds, cranberries, and feta in a large bowl.
Place all dressing ingredients in a blender or food processor. Blend to combine and chop the garlic. Alternatively, you could crush the garlic separately and whisk the dressing ingredients together.
Pour the dressing over the salad and stir to combine.
Notes
To make it more of a meal, add a grilled chicken breast to each person's bowl! Serve with a side of toast.
