Ingredients
¾- 1lblean ground beef
1large onionchopped
2tbspchili powder
2tbspcumin
1tbsporegano
1tspsalt
6clovesgarlicminced
2chipotle pepperschopped
2red pepperschopped
¼cupbrown sugar
2tbspvinegar
1tspliquid smoke
1 ½cupskidney beanscooked (or 1 can, drained and rinsed)
1 ½cupsblack beanscooked (or 1 can, drained and rinsed)
1cupfrozen corn
1can156 ml or 5 oz tomato paste
1can798 ml or 28 oz diced tomatoes
⅔cupdried lentils
2cupswater
Instructions
In a large pot, crumble fry the ground beef and onion over medium heat until beef is no longer pink.
Add in the chili powder, cumin, oregano, salt, and garlic. Cook for one minute.
Add in the remaining ingredients.
Cover and heat until boiling.
Turn down to low heat. Chili is ready when the lentils are soft (about 20 minutes).
