Ingredients
1tbspcanola oil
3cupssliced leekgreens and whites
1large appleor two small, cored and diced
4stalks celerysliced
1carrotshredded
4clovesgarlicminced
½cupmarinara sauce
3tbspyellow curry paste
1tbspchicken better than bouillon
1cupwater
½cupcream cheese
Choose a protein: 200g½ lb shrimp, chicken, paneer, or tofu
Serve over ricequinoa, or couscous
Instructions
Heat the oil in a large frying pan over medium heat.
Sauté the sliced leek until soft.
Add the apple, celery, carrot, and garlic. Sauté until tender crisp.
Make a well in the centre and add in the marinara sauce, curry paste, and bouillon. Cook for 1-2 minutes.
Add in the water and cream cheese. Stir the cream cheese into the veggies as it melts.
Serve over rice, quinoa, or couscous. Top with desired protein.
