
Transform simple ingredients into a luscious, flavour-packed meal! This creamy curry dish combines tender leeks, sweet apple, and crisp veggies in a velvety sauce of marinara, yellow curry paste, and cream cheese.
Remember those “Choose-Your-Own-Adventure” books from your childhood? This recipe will bring back the nostalgia for you because you can choose a new culinary adventure each time you make this recipe!
The curry stays the same (unless you want to play around with the ingredients- I won’t stop you!), but you can choose which protein and grain you prefer. Or … whatever might be kicking around in your fridge!

The curry/sauce/yumminess in a pan is maybe a strange mix of ingredients. Marinara sauce in a curry? Cream cheese in a curry? Yes – trust the process! Call it a fusion dish. Then it sounds fancy and as though I mindfully chose each ingredient with great intention. Instead of the truth, which is that I had a bunch of food in my fridge and in the name of food waste reduction, I threw them all together!
Thankfully, it all came together quite serendipitously instead of it being a major flavour disaster, which would have ironically increased food waste instead of decreasing it.

Apple Leek Curry
Ingredients
- 1 tbsp canola oil
- 3 cups sliced leek greens and whites
- 1 large apple or two small, cored and diced
- 4 stalks celery sliced
- 1 carrot shredded
- 4 cloves garlic minced
- ½ cup marinara sauce
- 3 tbsp yellow curry paste
- 1 tbsp chicken better than bouillon
- 1 cup water
- ½ cup cream cheese
- Choose a protein: 200g ½ lb shrimp, chicken, paneer, or tofu
- Serve over rice quinoa, or couscous
Instructions
- Heat the oil in a large frying pan over medium heat.
- Sauté the sliced leek until soft.
- Add the apple, celery, carrot, and garlic. Sauté until tender crisp.
- Make a well in the centre and add in the marinara sauce, curry paste, and bouillon. Cook for 1-2 minutes.
- Add in the water and cream cheese. Stir the cream cheese into the veggies as it melts.
- Serve over rice, quinoa, or couscous. Top with desired protein.
