Flavourful halloumi wraps filled with crispy pan-fried halloumi, fresh spinach, and radishes, generously drizzled with a homemade romesco sauce of roasted red peppers, almond butter, and sun-dried tomatoes. Eight wraps ready in just 15 minutes with 23 grams of protein each.

Ingredients
Romesco Sauce
1cupmarinara sauce
¼cupalmond butter
¼cupsun dried tomatoes
¼cupfresh parsleya handful... optional but adds a burst of freshness
8small roasted red peppersfrom a jar
1tbspolive oil
1tbspvinegar
¾tspsalt
½tsppaprika
4clovesroasted garlic
For the Wraps
8large tortilla wraps
4 cupsfresh spinach
8smallradishes
1cup sliced almonds or shelled pistachios
400ghalloumi
olive oilfor frying
Instructions
To make the sauce add all ingredients to a blender. Start on low then slowly move up to high speed. Blend until smooth.
Slice the halloumi into 1/4 inch thick slices. Pat each slice with paper towel to remove excess moisture.
Heat a large frying pan over medium heat. Brush a light coating of oil onto each piece of halloumi.
Fry the slices of halloumi until golden brown ( ~30 seconds to 1 minute on each side).
Layer the following in the wraps: ~1/4 cup romesco sauce, 1/2 cup spinach leaves, 1 radish, sliced, 2 tbsp almonds, and 3 slices of cheese.
