Halloumi Wraps with Romesco Sauce

These halloumi wraps are filled with salty cheese, crunchy veggies, nuts, and a show stopping sauce! One bite and you’ll be hooked!

What is Halloumi?

Halloumi is a firm, salty cheese, that fries and grills without melting into a pool of ooey-gooey cheese! Don’t get me wrong; I love ooey-gooey cheese when it’s on pizza or lasagna, but it’s also fun to be able to heat up cheese and then pick it up and eat it!

Why Put Halloumi in a Wrap?

This recipe was inspired by a meal kit recipe we got from a Good Food delivery. It was redonkulously delicious and I immediately knew I had to re-create the magic! Their version was fried halloumi served over freekeh with a side salad and romesco sauce. I decided to turn those flavours into a handheld version!

Having said that, you could also use these ingredients to server over your favourite grain: rice, quinoa, freekah, bulgar wheat, etc.

How to Make Halloumi Wraps

First you’ll need to make the amazing romesco sauce. All you do is throw everything in a blender and let the appliance do the job! ps: if you somehow have leftovers of the sauce you can thin it out by adding 1 tbsp each of olive oil and white vinegar to 1/3 cup of the sauce to make a salad dressing! Or you can use it to dress some pasta.

Next, you’ll prepare fry the halloumi. Both of these steps can be done in advance!

Then when you want to eat the wraps, layer them by starting with some sauce, adding the veggies and sliced almonds, then topping with the fried halloumi. Wrap it up by folding over the bottom half to cover the toppings and tucking underneath them. Next you’ll fold in the sides and then keep rolling up from the bottom, tucking in more of the sides as needed along the way!

Why These Halloumi Wraps are a Smart Choice

Halloumi provides a salty alternative to luncheon meat! Perfect for vegetarians or anyone wanting to cut down on processed food. The sauce is bursting with healthy fats and veggies, while the sliced almonds provide some plant-based protein!

About the Ingredients…

Feel free to mix and match wrap fillings with what you have on hand! I initially used sliced almonds when making and photographing this recipe but when I used the leftover sauce I decided to try pistachios and I like those even better!

Prefer field greens or romaine to spinach? Go ahead!

Not too sure about the radishes? I love the crunch they add but feel free to sub in cucumber or carrot slices or any other veggies you enjoy. I’m pretty sure this romesco sauce will elevate any veggie you throw at it!

Halloumi Wraps with Romesco Sauce

Ingredients

Romesco Sauce

  • 1 cup marinara sauce
  • ¼ cup almond butter
  • ¼ cup sun dried tomatoes
  • ¼ cup fresh parsley a handful… optional but adds a burst of freshness
  • 8 small roasted red peppers from a jar
  • 1 tbsp olive oil
  • 1 tbsp vinegar
  • ¾ tsp salt
  • ½ tsp paprika
  • 4 cloves roasted garlic

For the Wraps

  • 8 large tortilla wraps
  • 4 cups fresh spinach
  • 8 small radishes
  • 1 cup sliced almonds or shelled pistachios
  • 400 g halloumi
  • olive oil for frying

Instructions

  • To make the sauce add all ingredients to a blender. Start on low then slowly move up to high speed. Blend until smooth.
  • Slice the halloumi into 1/4 inch thick slices. Pat each slice with paper towel to remove excess moisture.
  • Heat a large frying pan over medium heat. Brush a light coating of oil onto each piece of halloumi.
  • Fry the slices of halloumi until golden brown ( ~30 seconds to 1 minute on each side).
  • Layer the following in the wraps: ~1/4 cup romesco sauce, 1/2 cup spinach leaves, 1 radish, sliced, 2 tbsp almonds, and 3 slices of cheese.
  • Wrap it up and eat it!
