Here’s this week’s lineup! The feature food is cilantro! Whenever I buy a bunch of fresh cilantro, I try to plan at least a couple of meal’s that will use this herb because a bunch typically gives you a lot to use!

Fresh herbs are one of my more recent discoveries for taking a dish from ordinary to extraordinary! If you’ve ever ordered any of those meal kits that get sent right to your door, you’ve probably noticed that nearly every meal incorporates fresh herbs! This is one reason why those simple meal ideas are sooo delicious!

You can re-create that “meal kit magic” by buying fresh herbs at the grocery store!

KITCHEN TIP: to keep your cilantro fresher for longer, remove the twist tie and place in a cup of water in the fridge (similar to how you would extend the life of fresh cut flowers).

DON’T LOVE CILANTRO? It’s theorized that some people have a “cilantro hating gene” whereby it actually tastes like soap them! Since I love the taste of cilantro I feel so sad for you, if you’re one of these people because I feel like you’re really missing out! But don’t fret, you can still enjoy these recipes. Just skip the cilantro in the Mango Quinoa Salad and substitute fresh parsley for the cilantro in the Chicken Kale Soup recipe.

This Week’s Lineup!

If you have an hour or two on the weekend to take some time to prep parts of your meals, then you can get dinner on the table so much faster during the week! Here are some meal prep ideas:

1. Chop your veggies

Chop your veggies and then place each meal’s worth of veggies in a ziploc bag.

Chicken Kale Soup with Sweet Potato: Dice the onion, celery, and sweet potato. Chop the cilantro and the kale.

Mango Quinoa Salad: Chop the mangoes, red pepper, cilantro, red onion, and cashews into bite size pieces.

Sweet and Spicy Garam Masala Skillet: Dice the onions and the carrots.

Sheetpan Ginger Beef and Veggies: Julienne the carrot, bell pepper, and ginger. Chop the broccoli and the onion.

2. Prepare your sauces

Make the dressing for the Mango Quinoa Salad. Make the sauce for the Sheet Pan Ginger Beef & Veggies.

3. Prepare your protein

Dice the cooked chicken. Cook the quinoa. Prepare the beef and batter.
