Pan of greek meatballs alongside a served bowl with fork and sundried tomatoes to top it all off.

NOTE: you’ll need to prepare a grain to serve the meatballs on top of. I prefer quinoa!

Creamy Chicken and Zucchini Lasagna
This creamy chicken and zucchini lasagna layers grated zucchini, spinach, sun-dried tomatoes, and diced chicken in a white sauce with three types of cheese for a vegetable-forward take on the classic. It makes 12 servings and bakes in about 60 minutes.

If you have an hour or two on the weekend to take some time to prep parts of your meals, then you can get dinner on the table so much faster during the week! Here are some meal prep ideas:

1. Chop your veggies

Chop your veggies and then place each meal’s worth of veggies in a ziploc bag.

Margherita Pizza: Prepare the marinated tomatoes in a covered container.

Creamy Chicken and Zucchini Lasagna: Dice the onion. Chop the spinach. Grate the zucchini.

Greek Meatballs with Easy Tzatziki Sauce: Dice the onion.

Pork Souvlaki: Prepare the Greek tomatoes.

2. Prepare your sauces

Pork Souvlaki: whisk together the marinade

3. Prepare your protein

Cream Chicken and Zucchini Lasagna: Cook and dice the chicken

4. Prepare your grains

Pork Souvlaki: cook the rice

Greek Meatballs with Easy Tzatziki Sauce: cook the grain you’d like to serve it over. I suggest using quinoa!

Happy meal prepping!
