If you have an hour or two on the weekend to take some time to prep parts of your meals, then you can get dinner on the table so much faster during the week! Here are some meal prep ideas:
1. Chop your veggies
Chop your veggies and then place each meal’s worth of veggies in a ziploc bag.
Curry Pumpkin Soup with Hemp Hearts: Chop the onion.
Pistachio Salmon Cakes with Apricot Rice: Chop the broccoli.
Cheesy Quinoa Waffles: Shred the carrot. Chop the green onions.
Sheet Pan Dinner with Pork and Dried Plums: Cut the red onion, cauliflower, and prunes.
2. Prepare your sauces
Make the sauce for the Sheet Pan Dinner with Pork and Dried Plums.
3. Prepare your protein
Cook the quinoa and lentils (Cheesy Quinoa Waffles). Cut the pork tenderloin into 4 steaks.
