Apple Leek Curry
This apple leek curry combines tender leeks, diced apple, and celery in a silky sauce of marinara, yellow curry paste, and cream cheese for a uniquely creamy, slightly sweet dish ready in 30 minutes. It works with shrimp, chicken, paneer, or tofu over rice, quinoa, or couscous.

You can feel free to switch up the protein, but I would suggest paneer or shrimp since there’s already chicken in the soup.

Spaghetti Squash Lasagna
Hearty three-cheese spaghetti squash lasagna layered with lean ground beef, spinach, mushrooms, and a blend of cottage cheese, mozzarella, and parmesan in marinara sauce. A lighter take on classic lasagna with 12 servings at 290 calories each.

Chorizo Chickpea Stew
This chorizo chickpea stew seasons ground pork with a homemade chorizo spice blend of smoked paprika, cumin, coriander, and cinnamon, then simmers it with chickpeas, spinach, and tomato sauce for a rich, boldly flavoured dinner at about $3 per serving. Serve with crusty ciabatta croutons for a complete meal.

Carmelized Butternut Squash and Apple Soup
This butternut squash and apple soup roasts the squash and caramelizes the apples and onions before blending with warming spices into a silky smooth fall bowl. An optional balsamic glaze adds a tangy finish that cuts nicely through the sweetness.

If you have an hour or two on the weekend to take some time to prep parts of your meals, then you can get dinner on the table so much faster during the week! Here are some meal prep ideas:

1. Chop your veggies

Chop your veggies and then place each meal’s worth of veggies in a ziploc bag.

Chorizo Chickpea Stew: Dice the onion, chop the peppers, and grate the carrots.

Three Cheese Spaghetti Squash Lasagna: Prepare the spaghetti squash. Dice the onion, red pepper, and mushrooms.

Apple Leek Curry: Slice the leeks, slice the celery and shred the carrot.

Carmelized Apple and Butternut Squash Soup: Slice the butternut squash lengthwise in half. Scoop out the seeds and put aside. Core and slice the apples. Peel and slice the onions.

2. Prepare your sauces

Three Cheese Spaghetti Squash Lasagna: Make the cottage cheese mixture. 

Chorizo Chickpea Stew: Stir together the spice blend.

3. Prepare your protein

Chorizo Chickpea Stew: Slice the chorizo sausage.

Apple Leek Curry: Prepare your chosen protein.

4. Prepare your grains

Apple Leek Curry: Cook either rice, couscous or quinoa.

Carmelized Apple and Butternut Squash Soup: Make croutons.
