If you have an hour or two on the weekend to take some time to prep parts of your meals, then you can get dinner on the table so much faster during the week! Here are some meal prep ideas:
1. Chop your veggies
Chop your veggies and then place each meal’s worth of veggies in a ziploc bag.
Sesame Udon Stir Fry: Shred the cabbage. Chop the Asian greens and the green onions.
Apple Bacon Arugula Salad: Chop the lettuce. Slice the celery and the green onion. Dice the apples and place in the bowl with the lemon juice (see step 3).
Pesto Gnocchi: Slice the red onion and the zucchini. Dice the eggplant. Quarter the cherry tomatoes.
Thai Green Curry Lentil Soup: Chop the onion. Grate the ginger. Mince the garlic. Cut the carrot and the water chestnuts.
2. Prepare your sauces
Make the spice mix for the Sesame Udon Stir Fry. Prepare the lemon vinaigrette for the Apple Bacon Arugula Salad.
3. Prepare your protein
Prepare the bacon.
