If you have an hour or two on the weekend to take some time to prep parts of your meals, then you can get dinner on the table so much faster during the week! Here are some meal prep ideas:
1. Chop your veggies
Chop your veggies and then place each meal’s worth of veggies in a ziploc bag.
7 Layer Dip: Make the guacamole if making your own (recipe here). Shred the lettuce. Dice the red pepper and the tomato.
Sheet Pan Chicken Fajitas: Slice the bell peppers and the onion into strips.
Cheesy Quinoa Waffles: Shred the carrot. Chop the green onions.
Quinoa Stuffed Pizza Peppers: Chop the mushrooms. Pop the stems off the bell peppers and cut in half lengthwise. Remove the seeds.
2. Prepare your sauces
Make the cottage cheese mixture for the 7 Layer Dip. Prepare the fajita oil for the Sheet Pan Chicken Fajitas.
3. Prepare your protein
Cook the black beans (7 Layer Dip and Sheet Pan Chicken Fajitas). Cook the quinoa and lentils (Cheesy Quinoa Waffles). Cook the quinoa with the bouillon and spices; cut the pepperoni (Quinoa Stuffed Pizza Peppers).
