If you have an hour or two on the weekend to take some time to prep parts of your meals, then you can get dinner on the table so much faster during the week! Here are some meal prep ideas:

1. Chop your veggies

Chop your veggies and then place each meal’s worth of veggies in a ziploc bag.

Spinach and Artichoke Quinoa Bake: Ribbon the spinach (thinly slice), and dice the artichokes.

Bún Thịt Nướng: Make the pickled carrots. Chop the lettuce.

Chorizo Chickpea Stew: Dice the onion, chop the peppers, and grate the carrots.

Peach Chutney Samosa Stew: Dice the onions, grate the carrots, and prepare the peach puree.

2. Prepare your sauces

Spinach and Artichoke Quinoa Bake: Make the sauce.

Bún Thịt Nướng: Make the Vietnamese sauce.

Chorizo Chickpea Stew: Stir together the spice blend.

3. Prepare your protein

Spinach and Artichoke Quinoa Bake: Cook and dice the chicken, or prepare the navy beans.

Bún Thịt Nướng: Prepare the pork.

Happy meal prepping!
