If you have an hour or two on the weekend to take some time to prep parts of your meals, then you can get dinner on the table so much faster during the week! Here are some meal prep ideas:

1. Chop your veggies

Chop your veggies and then place each meal’s worth of veggies in a ziploc bag.

Apple Bacon Arugula Salad: Chop the lettuce. Slice the celery and the green onion. Dice the apples, and place them in the bowl with the lemon juice (see step 3).

Instant Pot: Korean Beef: Chop the onion, shred the carrots, and slice the apple and green onions.

Greek Chicken Quinoa Salad: Cut the red pepper, cucumber, broccoli, cherry tomatoes, and red onion.

Pesto Gnocchi: Slice the red onion and the zucchini. Dice the eggplant. Quarter the cherry tomatoes.

2. Prepare your sauces

Prepare the lemon vinaigrette for the Apple Bacon Arugula Salad. Make the dressing for the Greek Chicken Quinoa Salad.

3. Prepare your protein

Prepare the bacon. Dice the chicken and place it in a sealed container in the fridge.

Apple Bacon Arugula Salad
This apple bacon arugula salad layers peppery arugula, crispy bacon, apple slices, pumpkin seeds, and cranberries with a bright lemon maple vinaigrette for a sweet and savoury combination. Tossing the apple in lemon juice prevents browning while doing double duty as part of the dressing.
