Creamy Roasted Tomato Farfalle

This creamy tomato sauce for bow tie pasta is made by throwing a few ingredients in the oven for a quick yet gourmet meal!

Have you seen that TikTok trend where you throw a brick of cream cheese and tomatoes in the oven and voila!… out comes the tastiest pasta sauce you’ve ever seen?

You might be thinking this is where I got the idea for this recipe from.

And you would be partially correct.

Right when this trend hit Instagram (because yeah… I don’t have TikTok and I hear about these things later #genxennialproblems) I was already in the midst of developing a recipe where you roast the tomatoes in the oven and make a separate creamy sauce in a pot on the stove. Basically the same thing but extra work!a

So, thanks to the TikTok trend, I simplified the process and through it all in the oven! I guess TikTok is good for something after all. Maybe I’ll have to reconsider getting an account 🙂

Let’s Look at the Ingredients for this Creamy Farfalle

FARFALLE: I chose farfalle (aka bowtie pasta) for this dish because I wanted something large enough to stand up to the size of the tomatoes but you can measure out (in weight) an equal amount of any shape of pasta you prefer!

RICOTTA and CREAM CHEESE: I chose to use some of each type of cheese to get a creamy feel from the cream cheese while getting a boost of protein from the ricotta. If you prefer, you could substitute a creamy goat cheese for the cream cheese. I just typed out the word ‘cheese’ for what feels like a million times, lol!

TOMATOES: I haven’t tested the recipe with other types of tomatoes but since we’re bursting the tomatoes at the end I think you could substitute roma tomatoes sliced into “cherry tomato” sizes with great results! You might end up with a bit of a thinner sauce though.

HERBS: I developed this recipe in winter when I typically rely more on dried spices but if you had fresh basil on hand, this recipe would taste great with some fresh basil when serving!

Next the farfalle gets added to the sauce and then you stir, stir, stir!

TIP: When bursting the little tomatoes, use the lid from the pot used to boil the noodles to cover the tomato. Sometimes bursting them open causes the hot tomato insides the squirt high and far!

Creamy Roasted Tomato Farfalle

Ingredients

  • 10 oz farfalle “bow ties” (4-5 cups)
  • 3 cups cherry tomatoes
  • 1 cup diced red onions (1 medium sized onion)
  • 1 cup ricotta cheese
  • ¾ cup cream cheese (5 oz)
  • 8 cloves garlic minced
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp salt
  • ¼ tsp freshly cracked black pepper

Instructions

  • Preheat oven to 425 degrees Fahrenheit.
  • Fill a medium to large size pot halfway with water. Place over high heat. When the water comes to a boil, add in the pasta. Drain pasta when cooked al dente.
  • Meanwhile add the remaining ingredients to a 9×12 pan.
  • Bake in preheated oven for 10 minutes. Stir to combine and then bake a further 15 minutes.
  • Remove from oven and stir in cooked pasta, bursting the tomatoes as you stir.
